From the enchanting hills of Italy to the bustling kitchens of Washington, D.C., Chef Noé Canales has embarked on a culinary journey that has ignited taste buds and captured hearts. With an illustrious career marked by passion, innovation, and a relentless commitment to his craft, Chef Noé has now unveiled his latest culinary masterpiece - Robiolina Amore in Edgewater, Maryland.

Born in El Salvador and raised in the United States, Chef Noé's love affair with Italian cuisine began in 1991 when he ventured to Italy. It was here that he fell in love with the country's rich culinary heritage. The memory of a humble yet exquisite potato soup, crowned with an over-easy egg and showered in white truffle, has forever etched itself in his soul as one of the finest dishes he's ever had.

Returning to the United States, Chef Noé's culinary prowess earned him a place in the hallowed kitchens of BiCE, a renowned Italian restaurant. Under the tutelage of Chef Giovanni (Gianni) Scappin, Chef Giovanni recognized Noé's unquenchable curiosity and swiftly moved him from the dishwasher to the food line, marking the birth of a culinary prodigy.

His journey led him to Café Milano under Chef Domenico Cornacchia and later to Duca di Milano in 1994. Chef Noé's talents continued to shine, and in 1995, he embarked on a culinary adventure to Las Vegas to open Trevise La Scalla under the esteemed owner Franco Nuschese.

In the heart of Washington, D.C., Chef Noé found his home at Luigi Diotaiuti's Al Tiramisu. As a Sous Chef at Al Tiramisu, he honed his skills and mastered the art of creating exquisite Italian cuisine. His journey continued at Ristorante Tosca in 2002, where he became the Chef de Cuisine under the leadership of Chef Massimo Fabbri and owner Paolo Sacco. It was here that he began to dream of creating a restaurant that showcased the pure and authentic flavors of Northern Italian cuisine.

With an enduring passion and a wealth of experience, Chef Noé brought his dream to life with the opening of Tortino, his first restaurant in Washington, D.C. The restaurant quickly became a beloved culinary destination, receiving critical acclaim and praise from patrons near and far.

But Chef Noé's culinary odyssey didn't stop there. He continued to expand his culinary empire with the launch of his second restaurant in Stafford, Virginia, delighting guests with the same dedication to exceptional Italian cuisine.

Now, Chef Noé has once again opened the doors to a new chapter in his culinary story - Robiolina Amore in Edgewater, Maryland. Here, he has masterfully combined his extensive experience, the flavors of his cherished Italy, and his lifelong love for authentic Northern Italian cuisine to create a dining experience that will leave a lasting imprint on your palate.
